Executive Chef: Phil Deffina

A New Jersey transplant at an early age, Phil Deffina's selection of chef as a career choice came not in one defining moment but through a sequential progression of life events that began in preschool.

From the tender age of three, Phil tasted and enjoyed the sophisticated and subtle flavors of escargot and two-pound lobsters while dining with his family at country clubs in Northern New Jersey. That early introduction to fine foods set the stage for his lifelong passion of preparing modern American cuisine. During his teen years he worked in restaurants, enjoying the fast-paced environment and the creativity of using simple ingredients to make a memorable meal.

Always hungering for more experience, Phil ultimately chose to attend culinary school, graduating from The Culinary Institute of America, and then traveled the nation to build his culinary repertoire. Before joining David Burke and The Burke Group's restaurants in New York and Connecticut, Phil worked under noted Chefs Roland Passot of La Folie in San Francisco and Chris Douglas of Icarus in Boston.

Relocating to the Jersey Shore to take over kitchen at David Burke Fromagerie, Phil has embarked on his quest to build upon David Burke's modern American cuisine with his own playful presentations, using simple, local and seasonal ingredients to delicious effect and stunning presentation.

On his rare days off Phil will be indulging his sweet tooth with a Reese's Peanut Butter Cup, his favorite sweet treat, checking out local farmers markets along the Jersey Shore, wandering his new neighborhood in Rumson, and spending time with his wife and baby in our beautiful Monmouth County parks.
